The roll timer keeps telling me to stop before I am finished rolling

Question

It counts down and buzzes while I am still tucking the sides in. I assume I am slow rather than the timer being wrong, but it is putting me off.

Is it timing the roll or something else?

It is timing the rest, not the roll.The timer starts when the tortilla comes off the heat and runs for the window where it is warm enough to be flexible but not so hot that steam gets trapped in the seam. The buzz means you are at the end of that window, not that you have taken too long tucking.So if it goes off mid roll, you started later than the timer assumed. Start it the moment the tortilla leaves the pan and it should line up.
